Thai Watermelon Salad

Watermelon is one of my favorite summer fruits and this recipe combines the sweetness with a hint of spice for a light and healthy lunch. It also packs in some protein with the peanuts and cheese. Paired with some wild berry iced tea it highlights the flavours of summer at their best. I hope you enjoy.

Here is how:
1.  Assemble together:
- 1/4 of a watermelon (skin removed and flesh cubed)
- 2 handfuls of fresh cilantro (chopped)
- 2 handfuls of baby greens (chopped)
- 2 handfuls of fresh mint (chopped)
- 1/2 red bell pepper (deseeded and chopped)
- 4 oz. fresh mozzarella (cubed)
- a handful of peanuts

2. For the dressing combine:
- a thumb size piece of fresh ginger (peeled and grated)
- 1 tsp. dried chili pepper flakes
- 2 Tbs. gluten free tamari sauce (I use San J brand)
- 4 Tbs. extra virgin olive oil
- 1 tsp. sesame oil
- Juice of 2 limes
- Freshly ground black pepper and sea salt to taste
